100 Years of Excellence in Premium Pure Vanilla Extract
Since 1918, we’ve used the same slow, cold, extraction method our family developed a century ago to manufacture our pure vanilla extract. Every drop of our premium vanilla extracts represents painstaking craftsmanship, from the hand pollination of each vanilla bean, to traditional sun-curing, to our artisanal extraction protocols. We personally select our vanilla beans, and as a small family business, take immense pride in working directly with independent farmers. That’s what we call fair trade. We also offer a full line of food flavorings, each developed in-house to our highest standards.
From our family to yours, Cook’s is The Drop That Makes the Difference.

Choice Pure Vanilla Extract
Choice Pure Vanilla Extract is the best vanilla you can buy! Rich. Complex. One of a kind. Ken Cook, longtime president of Dreyer’s Grand Ice Cream, searched for the highest quality vanilla and uncovered R.R. Lochhead's 100-year family legacy in Paso Robles, California. Cook’s Vanilla represents our drive to produce the finest vanilla extracts. Only ten percent of the world’s vanilla beans are picked when perfectly mature. We harvest the fully vine-ripened beans and cure them ourselves to assure a delicate, intense, beautiful vanilla. Through our cold extraction, we have captured this exotic essence in a bottle. The quintessential vanilla extract that no kitchen can be without. Cook’s Choice Pure Vanilla Extract is our premium pure vanilla extract, made with the world’s best beans. We use more vanilla beans in our extract than most extracts you buy, providing added strength and richness. Additionally, we go directly to the source to find our vanilla beans. Therefore, we only use the absolute best vanilla for our extract. Cook’s Choice is a necessity for cakes, cookies and ice cream, but can be added to almost every dessert to introduce sweetness and complexity while elevating the flavor notes of other ingredients. Cook's Choice Pure Vanilla Extract is made with the finest vanilla beans from Madagascar. Vanilla beans from Madagascar are of the Vanilla Planifolia variety. Often referred to as Bourbon vanilla beans, vanilla beans from this region are named after the French Bourbon Islands, one of which was Madagascar. This variety of vanilla is universally pleasing and enhances other flavors. Flavor notes: Creamy, rich, sweet and warm. Enhances other flavors. $18.00 – $1,750.00
Gourmet Madagascar Bourbon Vanilla Beans
Madagascar Gourmet Vanilla Beans from a 100-year-old family business specializing in vanilla since 1918.
Lustrous hand-cured and hand-selected vanilla beans from the chief source of the world’s best-quality vanilla. Nothing is plain about these vanilla pods. Each vanilla bean is more than 5 inches (13-15 cm) long, packed with gorgeous black seeds and plump with its correct moisture content, unlike the dried-out beans you often see in supermarkets. These are the dominant planifolia variety, as distinguished from the shorter, drier Tahitian bean.
Fabulous in creamy desserts such as homemade ice cream and creme brulee, white cakes and baked goods, as well as fancy savory dishes. The first choice of top chefs.
Each black vanilla pod is the result of painstaking craftsmanship, nurtured by hand start to finish, hand-pollinated and sun-cured over many months, with careful inspection at each step. We select only fully ripe, late harvest vanilla beans. Sourced directly from our village cooperatives to assure quality and a fair price to farmers.
Cook’s Vanilla is a family owned and operated business established a century ago to provide fine vanilla to American households. Now in our fourth generation, we are on the ground in the the world’s vanilla growing regions, personally selecting the world’s best vanilla.
Recommended Usage
To use a vanilla bean, using a sharp knife, carefully cut down the length of the vanilla bean. Using the dull edge of the knife, gently scrape out the seeds into the desired batter or mix. Do not throw away the remaining fibrous pod, rather steep it in milk or cream to infuse with delicate vanilla flavor or place into sugar jar to scent your sugar with vanilla flavor. See our blog on Making Homemade Vanilla Extract!Sizing Options

$21.95 – $344.00
Cookie Pure Tahitian Vanilla Extract
Cookie Pure Tahitian Vanilla Extract is the perfect flavor addition for vanilla lovers! Intense. Sweet. Floral. Exotic enough to confound without overpowering. Our favorite way to use Tahitian vanilla extract is in cookie dough, hence the name Cookie Vanilla. Like a secret ingredient that imparts an “I can’t have just one” sensation, this extract makes cookies vanish. We use more vanilla beans in our extract than most extracts you buy, providing added strength and richness. Additionally, we go directly to the source to find our vanilla beans. Therefore, we only use the absolute best vanilla for our extract. Cook’s Cookie is a necessity for cookies and to enhance tropical flavors like pineapple and banana, but can be added to almost every dessert to introduce a stand-out secret vanilla flavor. The exotic vanilla extract that no chef or vanilla lover's kitchen can be without. Cook’s Cookie Pure Tahitian Vanilla Extract is our premium pure Tahitian vanilla extract blend, made with the world’s best beans. Our Cookie vanilla is our strongest Tahitian vanilla extract blend. At Cook's, Tahitian vanilla beans are blended with Bourbon beans to create a pleasing yet exotic vanilla flavor. An extract using only Tahitian vanilla beans can be overpowering and unpleasant for most. Tahitian vanilla is a different plant species from the Bourbon, with less natural vanillin and a distinctive floral and fruity taste that makes it a favorite of pastry chefs. Bold enough to match the strong flavors of pineapple, mango, and banana, this extract pairs beautifully with tropical fruits. Cookie Pure Tahitian Vanilla Extract can also be used in cocktails to introduce complex and surprising flavors in pina coladas, mojitos, hurricanes, strawberry daiquiris, or any cocktail with a whiskey, rum, or vodka base. Use as bitters with a dropper. Flavor notes: floral, fruity, exotic, distinctive. For more information on our vanilla extracts, see our blog on regional vanillas.Wholesale and Bulk Sizing:
