Almond extract is a classic flavor used world wide in cakes and cookies. The main flavor component of is natural oil of bitter almond which is also present in the pits of stone fruits such as apricots, plums, nectarines, and cherries. Because of this, Pure Almond Extract enhances desserts with these flavors beautifully.
It is important to note that Cook’s Pure Almond Extract is strong! In recipes where almond extract is the hero, use one teaspoon for a standard batch. In recipes where almond extract is used as a flavor enhancer, like cherry or peach pie, use 1/4 to 1/2 a teaspoon per standard batch.
Cook’s Pure Almond Extract can also be used as a substitute for almond liqueur (Amaretto) in recipes or to make your own almond liqueur. For recipes calling for Amaretto, substitute 1/2 teaspoon organic almond extract for 1 tablespoon Amaretto. Check out our blog on the differences between extracts and liqueurs!

Recommended Usage:
In standard single batches, use 1/4 teaspoon to 1 teaspoon. As a condiment, use dropper to add 1-2 drops to taste. Finally, for wholesale applications, use 2 to 4 ounces per 5 gallons (40 pounds) of mix. Shelf life is 1095 days from manufacture. Manufacture date is listed as UDC. Store in a cool, dry, dark container away from sunlight.

Your almond extract is the weakest almond extract I’ve used in 40 years and I believe loses its strength in less than a year. I’ve never had this experience with any other Pure Almond Extract.

In my Christmas butter cookie recipe, I use 1/2 Almond & 1/2 Vanilla flavoring. When I ran out of Cook’s extracts, I could no longer find them at Ralphs.
